Corn Mango Salsa Recipe

Corn Mango Salsa combines sweet mango and fresh vegetables with tangy lime and cilantro. Talk about an explosion of flavor!

Sweet bell pepper, crispy sweet corn and spicy jalapeno are the base of this fresh salsa.

Add in tropical juicy bits of mango, citrus notes of lime and a hint of spice with chili powder and cumin and life is good.

This salsa recipe comes together in just minutes and you can serve it right away. However, you can make it ahead and refrigerate for about an hour or so and the flavors will marry as it sits together.

Tacos aren’t complete without salsa. Make it a homemade salsa and your tastebuds will thank you.

Of course this mango corn salsa will be a delicious topping for your next taco night but you must also try it over chicken, beef and even as a topping over seafood.

Fish tacos with mango salsa is an amazing combination of flavors and textures. The delicate flavor of shrimp or cod pairs well with the bright fresh flavors of corn mango salsa.

And be sure to grab a bag of tortilla chips and serve this tropical salsa straight up too!

And let your imagination run wild with stir-ins, like black beans, diced pineapple or avocado!

If you want to be brave, you can use a spicier habanero pepper instead of the jalapeno and make mango habanero salsa that might possibly knock your socks off.

And while you’re getting creative, why not grill the corn on the cob and make a grilled corn and mango salsa!

Any way you serve it, Corn Mango Salsa will be a new family favorite and you’ll never want to go back to jarred salsa again.

steps for making corn mango salsa
  • In a small bowl, combine mango, bell pepper, jalapeno, corn, cilantro, lime juice, vinegar, fresh garlic, olive oil, chili powder, cumin and kosher salt.
  • Stir until combined.

Swirls of Flavor Recipe Tips

  • You can serve this salsa immediately but the flavors will develop if you refrigerate it for about an hour before serving.
  • Cutting fresh corn off of corn on the cob is my favorite corn to use in this recipe.
  • I do not recommend using green bell pepper in this recipe as it is not as sweet as a red bell pepper
  • Add black beans for a hearty salsa
  • For a zestier flavor, add lime zest
  • I recommend using fresh mango for the best flavor
  • Be sure to use a ripe mango for the best results
  • Add red onion or yellow onion

Substitutions

  • You can easily use frozen corn kernels or canned corn in place of fresh corn kernels.
  • Frozen mango can be used in place of fresh mango if necessary.
  • Orange bell pepper or yellow bell pepper can be substituted for the red bell pepper

Storage

  • Store your homemade salsa in an airtight container or a mason jar in the refrigerator
  • Salsa will stay fresh for about 1 week
  • As always, I find it helpful to visit the FDA website for food storage guidelines
